Sooooooooooooooo I finally figured it out!!!!
The only app that was working properly AT&T Messages, was also the app causing all the fucking problems. As soon as I cleared the data from it, and as long as I don't go into it and reactivate it everything works PERFECTLY FINE!!!!

...and use GO SMS Pro for outgoing messages... and Handcent for checking incoming messages...
